With football season and ongoing get-togethers throughout the fall, the temptation of a juicy, sizzling burger might be all around you. But don’t fret—let Chef Richard’s Portobello Sandwich come to the rescue! Equally satiating, dripping with flavorful goodness and bursting with nutrients, this hearty BLT alternative will keep your stomach and taste buds happy—not to mention the rest of your body!

Q: How did you come about creating a plant-based version of a BLT?

I once had tofu bacon at restaurant and it got me thinking about making a vegan BLT. I’ve never been a fan of bacon myself but a lot of people love it, which is why I wanted to create a healthy yet delicious alternative.I thought it would be fun with Portobello, which makes it super easy to make.

Q: What are some things we can do with the Portobello Sandwich to spice things up a bit?

If you’re literally looking to add spice, add chipotle sauce or sriracha to the Vegenaise. You can also add more nutrients and texture by adding your favorite topping, like a grilled eggplant, roasted red peppers or sprouts. Get creative!

Q: What else goes well with the Portobello Sandwich?

Definitely a clean, crisp salad or kale chips. If you want something to drink, create a simple lemonade by adding a few drops of liquid stevia, crushed mint and a splash of lemon to ice water. It’s so refreshing!

It’s no coincidence that kale has reigned supreme in the wellness world as the darling of nutritional greens! Not only is it low in calories and contains zero fat, making it the perfect snack for those watching their waistlines, it’s loaded with nutrients, such as vitamins A & C, folate, calcium, magnesium, iron and free radical-fighting antioxidants. On top of that, kale is high in fiber to help your digestive system expel toxins as well as omega-3 fatty acids, which help combat asthma, arthritis and autoimmune disorders. Kale is undeniably one of the most anti-inflammatory and detoxifying foods you can eat.

Even better news? You can make kale seriously delicious. Our Crunchy Crisp Kale Chips are an addicting alternative to nachos and even kids will love them!
